Good EATs!

As if we are not all sick of food right now…post-Thanksgiving “yuck-syndrome” and all….here’s some more FOOOOOD for you!!! Ha!!

Let’s just call these, “odd things to do to your Greek yogurt“…

 I should warn you…although it certainly doesn’t happen to everyone…some people may experience some allergy symptoms from bee pollen. I had not consumed any since I was a kid, and I don’t recall any issues then…but this definitely gave me an itchy, runny nose. I plan to try it again just to see if it was a fluke. It is something that happens on occasion…which makes sense, especially if you have environmental allergies to some plants/weeds/molds/trees etc. like I do. Oh well…

Eggs…seriously, one of my staple foods. I love how they are so packed full of protein and nutrients, and they are so versatile and easy! It doesn’t suck that they are so incredibly delicious as well!

More “Egg-stra” versatile Egg dishes!

This meal was pretty darn good! Hubby made spinach stuffed chicken breast (already prepared from Fresh Thyme), veggie tots, and snow peas.

Absolutely LOVED this lunch! So easy and clean! Grilled Salmon – Spinach salad w/ golden yellow tomatoes and pepperoncini – Sautéed bell peppers and onions in coconut oil, diced avocado – Topped w/ a sprinkling of toasted quinoa.

I’ve still been eating well…it’s just been really busy lately. Half of the time I forget to take pictures of my food!! ((forehead slap)) It has been frustrating with my weight loss stalled out (due to my thyroid level being messed up), but I will soon get back on track once that levels out. I am feeling so much better already at least!

Things will be changing up very soon, as I am going to be starting my Lean Life Project and some carb-cycling. More to come on all of that. I need to really buckle down and stay pretty strict post-surgery, since I won’t be able to be very active for 4-6 weeks. I also want to do this in preparation to ROCK the All-In 24 Day Challenge that will be starting with everyone on January 2nd. More to come on that as well. We have a HUGE group of people jumping on board to start the LL Project and 24DC. I’m super excited to be a part of something so big and important. It is a true blessing to coach others in improving their health; completing these challenges right along-side of them is even better!!
