Since my trip to Chicago this past weekend, I’ve really stepped it up. I’m kind of feeling super-charged and ready to kick my butt into high gear. Let’s start with a little bit of what I’ve been eating the past couple of days!
Tonight’s dinner: grass-fed beef burgers on the grill (thanks hubby) w/ mashed avocado and a sprinkle of pepper, steamed broccoli and cauliflower, and a freshly cut romaine and basil salad w/ fresh blueberries and strawberries, feta crumbles, crushed walnuts, and toasted quinoa w/ a drizzle of raspberry balsamic vinaigrette.
Today’s Lunch: Roasted veggie panini, fresh spinach salad w/ organic English cucumber, cherry tomatoes, peperoncinis, w/ a drizzle of light Caesar dressing, and a chia seed pudding w/ fresh blueberries and strawberries for dessert.
This morning’s breakfast: puréed spinach and pumpkin overnight oats w/ banana, dried cranberries, chopped walnut, and a pinch of cinnamon.
